Nutritionist Megan’s Vitamin C Packed Roasted Vegetables

Ingredients:

  • 1 Head/Bunch of Organic Broccoli, Brussel Sprouts or Cauliflower {or combination of all THREE! 🙂}
  • 2 Tbsp Avocado Oil
  • 1/4 tsp Garlic Powder or 3 garlic cloves, minced {or more of you prefer extra garlic}
  • 1/4 tsp Chili Powder {or more if you prefer more spice}
  • Pinch of Himalayan Salt
  • Bragg’s Nutritional Yeast, if you choose

*Double ingredients if using 2 Heads/Bunches of Broccoli, Brussels or Cauliflower; 1 Head seems to serve approximately 2-3 people.

Directions:

  • Preheat oven to 375 Degrees F
  • Thoroughly wash and cut produce into halves {i.e. 1 broccoli floret with shortened stem – cut down the middle of floret & stem; cut into quarters if you are preparing for young kids}
  • Place all of the washed and cut produce into a bowl and toss with avocado oil, garlic powder, chili powder, and Himalayan salt
  • Cover a roasting pan with foil
  • Spread vegetables evenly onto roasting pan
  • Place in the oven for 25-35 minutes {depending on your crispiness desire – if you prefer it a little more crisp, cook it for 35 minutes}
  • Sprinkle Bragg’s Nutritional Yeast on top of roasted vegetables for an added nutty/cheesy flavor
  • Serve & Enjoy! {Adult and toddler-friendly 🙂}

Matzo Ball Soup

Servings: 6

Ingredients:

  • 4 large eggs
  • 2 teaspoons Celtic sea salt
  • ¼ teaspoon ground black pepper
  • 2 cups blanched almond flour (not almond meal),
  • sifted 6 cups chicken stock or Kettle & FireBone Broth

Instructions:

  1. In a medium bowl, beat eggs, (1 teaspoon) salt and pepper for 2 minutes
  2. Stir in the almond flour
  3. Refrigerate the mixture 2-4 hours
  4. Remove from refrigerator
  5. Heat a large pot of water (with 1 teaspoon salt) and bring to a boil
  6. Roll the batter into 1-inch balls then drop into the pot of boiling water.
  7. Reduce heat, cover and simmer for 20 minutes
  8. Heat 6 cups chicken stock in a separate pot
  9. When the matzo balls are finished, remove from simmering water with a slotted spoon and add to chicken stock
  10. Ladle stock, plus 2-3 matzo balls into individual bowls and serve

  • Before and after caring for someone at home who is sick with vomiting or diarrhea
  • Before and after treating a cut or wound
  • After using the toilet
  • After changing diapers or cleaning up a child who has used the toilet
  • After blowing your nose, coughing, or sneezing
  • After touching an animal, animal feed, or animal waste
  • After handling pet food or pet treats
  • After touching garbage
